Classic Chocolate Brownie

 

Serves: 6 generous portions

Ingredients

  • 125g very soft butter or margarine
  • 180g dark chocolate, melted
  • 100g caster sugar
  • 3 whole eggs
  • 90g plain flour
  • 30g self raising flower
  • 1tbsp cocoa powder
  • 1tsp vanilla essence
  • 1/2 cup coarsely chopped hazelnuts (substitute with pecan or walnuts if you prefer)

Preheat the oven to 170C. Grease a round spring form cake tin with little bit of butter or margarine.

Melt the dark chocolate in a glass bowl that is placed over a small pot of simmering water. Make sure the bowl is not touching the water. You don’t need to stir the chocolate, just let it melt slowly.

While the chocolate is melting sift all the flour and cocoa powder into mixing bowl, then add melted butter, sugar, slightly beaten eggs and vanilla essence. Fold all together using a spatula until the mixture is all combined, then add melted chocolate and chopped nuts. The mixture is now ready to be poured into a prepared baking tin, use spatula to spread evenly.

The brownie should be baked for 25 minutes so when it comes out bit firm on the top and slightly gooey in the middle. Best to serve while still warm with a nice dollop of ice cream.
